When I set out to make this recipe, I initially despaired: how would I find peaches a month before peach season had even begun? Then, serendipitously, I met my newest neighbor, Katie. Katie, it turned out, was related to the Dickeys, owners of Dickey Farms, in Musella, GA. And guess what Dickey Farms had?! In all its sweet, juice glory?! That’s right. Peaches. Hallelujah! When Katie offered to hook me up, I was thrilled. Not only did I have peaches, but I had scored what were possibly the most luscious, juiciest peaches around!
And while peaches are surely delectable all on their own, pairing them with this lime dip takes them to the next level. Besides the tang of lime, you’ve got a kick of ginger here, not to mention this salty-sweetness that the coconut aminos impart.
Summer fruit is easy fruit, and nowhere is that more apparent than here. Don’t have a grill, or don’t feel like firing it up? No problem. Peaches will caramelize just as beautifully on a cast iron skillet on the stovetop, or even broiled (don’t walk away!!) in the oven. Though I’m guessing most would forego that last method, in the heat of summer (I know I sure would).
Peaches = Summer Pleasure
Needless to say, these peaches were at the absolute peak of ripeness when I made this recipe. They were divine. I always save some of whatever I make to let C and hubby try. When I passed out the peaches we all marveled at how perfect they were. And while I don’t say this often, in this instance I truly felt transported. For a moment, the chill of what had been a cold, late spring season melted away, and there was just us and the pleasure of a perfectly ripe peach.
What I Used to Make this Recipe:
- Coyo yogurt – you could use any AIP-compliant brand – this one happens to be my favorite!
- honey (or sub maple syrup to make vegan)
- ground ginger
- coconut aminos (an AIP staple!)

Grilled Peaches with Lime Dip
This refreshing treat can be made just as easily indoors on the stovetop as it can over the grill. Either way, the caramelized peach pairs beautifully with the cool tang of this dairy-free lime dip!
- 3-4 peaches
- 5 ounce plain coconut yogurt (I used one individual CoYo container)
- 1 Tablespoon + 1 teaspoon honey (sub maple syrup to make vegan)
- juice of 2 limes
- 1 teaspoon lime zest
- 1/2 teaspoon ground ginger
- 1/2 teaspoon coconut aminos
Heat grill (if using gas, turn to medium heat). Cut peaches in half and remove pits.
Grill on cut-side for 4-5 minutes, until grill marks appear. Flip and cook until skins are slightly charred and peaches soft, another several minutes.
Make lime dip: Combine all ingredients in a small bowl. Mix well.
Serve alongside a main meal, like our Pulled Pork with BBQ Sauce. These are also perfectly delicious as an appetizer or light dessert. Enjoy!!
