One sheet pan meals are becoming very popular, and it’s no wonder! We are all busy and looking for ways to decrease cooking time, cleanup time, or heck, both! I know that’s true in my house, anyway. Hubby is on cleanup duty which he isn’t always thrilled about, since I don’t exactly make it easy on him! But he was more than happy with the minimal cleanup required for this meal. Skirt Steak and Sweet Potato Wedges – not just delicious but so incredibly easy to make!

I’ve even created an absolutely yummy Creamy Italian dressing / dip to serve it with. Pair with a bed of greens or some simple roasted broccoli and you’ve got a complete meal!

YUM. Skirt steak also happens to be hands down my favorite form of steak. It is just so tender, juicy, and cooks so beautifully using this method. Sweet potatoes are obviously fabulous…and this dipping sauce is amazeballs! Seriously, I could go swimming in it!

Skirt Steak and Sweet Potato Wedges + AIP Italian dressing

AIP + Paleo and Whole30, this one sheet pan meal will leave you wanting more!! Paired with a creamy AIP Italian dip / dressing, this versatile meal can be fancy or modest. Either way, you and your non-AIP family and friends will be satisfied!

Ingredients

  • 1 lb skirt steak
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 2 large sweet potatoes
  • 1 Tbsp avocado oil
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1 tsp oregano
  • 1/2 tsp sea salt

Instructions

  1. Preheat broiler. Cover a large pan sheet with parchment paper. Pat steaks dry and season with garlic powder and sea salt. 

  2. Cut the sweet potatoes into wedges. Place on parchment paper. Coat with avocado oil. In a separate small bowl, combine basil, thyme, oregano and sea salt. Sprinkle over sweet potatoes and toss to coat.

  3. Spread sweet potatoes around edges of baking sheet and place steaks in the middle. Broil for ~10-12 minutes, flipping the steak halfway.

Recipe Notes

Notes:  This can easily be doubled, though cooking times will likely increase some. 

AIP Italian Dressing + Dip

An easy Italian dressing + dip that's AIP + Paleo!!

Servings 5 Tbsp servings

Ingredients

  • 1/3 cup avocado oil
  • 1 Tbsp palm shortening
  • 1 1/2 tsp raw apple cider vinegar
  • 1/2 tsp oregano
  • 1/4 tsp thyme
  • 1/4 tsp basil
  • 1/4 tsp sage
  • 1/2 tsp sea salt

Instructions

  1. Put all ingredients in either a high powered blender OR a container wide enough to fit an immersion blender. Blend for 1 minute. Serve alongside the Skirt Steak and Sweet Potato Wedges, or with salad, roasted vegetables, whatever you fancy!

  1. I’m always worried about parchment paper catching on fire with the broiler. You don’t have that problem? Maybe I’m being over cautious.
