Ah coffee. There is probably no other drink which I was so discouraged about not being able to drink. Stopping alcohol has proven no biggie. But I was greatly missing my coffee (although totally NOT missing how it made me feel)! Then I discovered herbal coffee, specifically this Herbal Latte. And I saw some rays of sunshine again in what I thought would be a coffee-less future. There is zero caffeine and nothing but herbs in this latte, but it has the creamy consistency and taste of coffee – totally satisfying.
The herbs used in this latte are wonderful substitutions for coffee.
Chicory root actually helps lower stress levels, contains prebiotics, and anti-inflammatory polyphenols. Hello, love!! It also has this rich, earthy flavor, making it a near perfect coffee-substitute.
Roasted dandelion root is just as fabulous. It too is a prebiotic that a bitter that aids digestion, helps balance hormones, and supports detoxification.
This Roasted Herbal Latte goes a step beyond coffee, to the creaminess that is a latte, which is a perfect choice for someone like me, who only drank her coffee like a milkshake, anyway!
But there’s even more to love! Besides the herbs, the following makes this latte a nutritious choice:
Coconut Milk: creamy and decadent, coconut milk is also rich in essential trace minerals like manganese and copper. It also is a good source of iron and potassium. Make sure you’re buying a kind that doesn’t contain xanthan gum or BPA in the can. I love this one.
Collagen: the amino acids in collagen assist in repairing the gut lining. This is exactly what those of us with leaky guts need. It also helps reduce wrinkles and strengthen and repair nails and hair.
Cinnamon: more than just delicious, cinnamon helps lower sugar and reduces heart disease risk! Such an (often underappreciated) superfood!
Beyond how nutritious this roasted herbal latte is, it’s also just plain delicious! Dealing with candida or eating low / no sugar? Just omit the dates.
What You’ll Need to Make This Recipe:
- French Press – the only way I make roasted herbal latte!
- Immersion Blender – I cannot imagine my life without this!
- Collagen – I always keep a container of the Vital Proteins around – the best!
- Chicory Root – a bag from Starwest Botanicals will last for ages.
- Roasted Dandelion Root – I also buy in bulk.
- Coconut Milk
- Dates (optional)
Roasted Herbal Latte
Easy to make, this nourishing blend of roasted herbs and creamy collagen milk will satisfy any coffee craving!
- 4 oz boiling water
- 1 Tbsp chicory root
- 1 Tbsp roasted dandelion root (you can also use JUST chicory root OR dandelion root)
- 1 cup full-fat coconut milk
- 2 scoops collagen powder
- 1 tsp cinnamon
- 1/2 tsp alcohol-free vanilla extract
- 1/4 tsp ginger
- 1 date (optional)
Bring water to boil and pour over herbs in french press.
While steeping, make milk: put coconut milk, collagen powder, cinnamon, vanilla extract, ginger and date in medium saucepan and bring to simmer. Simmer for 5 minutes before blending with immersion blender (or transfer to blender to blend - just be careful not to close lid tightly because heat may cause it to explode!)
Strain "espresso" from french press into cup. Pour milk mixture on top and blend again. Top with cinnamon, if desired. Enjoy!!
You can use all chicory root or all dandelion root. I just prefer to taste from using both.
Dates are completely optional.
2 Tbsp of herbs are used to create the depth and richness of "espresso" here.
