I am a fan of anything that involves chocolate and fruit. I am NOT a fan of flavorings or additives, so much of the widely available flavored fudge is no option for me. Plus, I try to regulate my intake of the beloved stuff anyway, since I’m still sensitive to both the caffeine and the cacao seed. The solution? I came up with a fudge recipe that has all the brightness of orange but made with carob instead of chocolate, making it AIP and Paleo friendly, + vegan to boot!!
And guys, this stuff is seriously the bomb. SO so good. My test? Does my hubby like it. And daughter. They BOTH need to like something because I don’t entirely trust my daughter’s judgement. Yesterday she scarfed down a piece of gummy, under cooked-looking piece of zucchini bread and declared it delicious. Which is awesome for her, but for my readers? Not so much! But when a food passes the taste test for them both, I know it’s a winner.
My hubby thinks orange is pretty much an ambrosia, so I made this in large part for him. The fact that neither he nor my daughter noticed that it was carob, not chocolate, also means you could totally pass this off as chocolate to your unsuspecting non-AIP friends. Or you might stash this in a far away corner of your fridge for a special me-time treat. Perfectly OK as well.
As for me, I could eat fudge pretty much everyday (though I don’t of course). But there’s something about the melt-in-your-mouth texture, and that bright orange to balance the carob’s richness? Oh man. Currently I am not consuming fudge of any kind, but it’s always a possibility in the future.
The orange zest is key here, as is the concentrated orange juice. Those two together give this fudge its bright, sweet flavor.
What You’ll Need for This Recipe:
- coconut oil (I always use refined for baking, I’m not a huge fan of the coconut flavor)
- coconut manna (nectar of the gods, I tell you!)
- maple syrup
- carob powder (or sub cacao if you can tolerate)
If you make this, don’t forget to #letscreatethesweetlife!!
5 Minute Chocolate Orange Fudge
This chocolate orange fudge is rich, smooth and velvety, with bright orange notes. Made with just seven ingredients, it features carob, making it the perfect AIP / Paleo treat!
- 1/2 cup coconut oil, refined
- 2/3 cup coconut manna
- 1/3 cup maple syrup
- 2/3 cup carob powder (or sub cacao if tolerated)
- 2 Tbsp orange juice concentrate
- Heaping Tbsp orange zest (~1 large orange or 2 medium)
If your coconut oil and / or coconut manna are hardened, you'll want to soften them. I find the best way to do this is in a warm water bath - I place the entire jar in a pan with heated water and let sit for a few minutes.
Line an 8 x 8 pan with parchment. Place all ingredients in a medium bowl and mix well.
Pour into pan and place in fridge to harden, between 1-2 hours. This is the hard part, waiting!
Cut into pieces using a sharp knife and ENJOY!!!
