It is also made with ingredients you may either have on hand, or will be able to find at your local grocery store.
This dish is just plain delicious! And I love how quickly it comes together.

I’ve loved making it as a base for Shiitake Salmon or even Bacon and Eggs. Even though I often simply roast it with garlic and some fat in the oven, but this fried rice is another great way to get cauliflower’s nutrients into your family’s meals.

If that’s not enough reasons to start eating more, consider that it also fights inflammation and even balances hormones!
When you buy ham, make sure you look at the ingredients to make sure there aren’t any filers or emulsifiers. I found mine at my local butcher’s, but Applegate Naturals (found in most grocery stores and Whole Foods) also has one that is uncured and nitrate free.
What You’ll Need for This Recipe:
- Healthy Fat for Cooking: Avocado, Coconut and Duck are all excellent choices!
- Garlic and Onion powders. I try to buy these organic – but I find they are more affordable at my local grocer’s than through Amazon!
- Pineapple, Ham, Cauliflower – all widely available

Pineapple Ham Cauliflower Fried Rice (AIP / Paleo / Whole30)
This dish comes together with just 7 ingredients and one pan. Delicious way to get more cauliflower into your diet in a way the whole family will love.
- 1 medium to large cauliflower, riced
- 1 1/2 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp sea salt
- 2 Tbsp cooking fat coconut, avocado, tallow, lard
- 3 cups cubed pineapple
- 10 oz nitrate-free ham (check ingredients to make sure there are no emulsifiers or fillers)
Heat pan over medium heat. Rice cauliflower using food processor (or purchase pre-riced). Cube pineapple.
Add 1 Tbsp fat to pan. When oil is hot, add cauliflower and cook until nicely browned. While cooking, cut hams into cubes. When rice is done cooking, remove from pan and put into bowl.
Add ham to pan and cook until slightly caramelized, ~5 minutes. When done, add to bowl with cauliflower rice.
While ham is cooking, add spices to bowl with cauliflower rice and toss to combine. Taste and adjust seasonings as needed.
Turn pan up to medium high and add the other Tbsp fat. Swirl in pan to coat. Add pineapple and allow to caramelize slightly (Keep an eye, it will happen fast!)
Notes: I find getting the pan nice and hot before beginning key to success. Food cooks more evenly and easily this way.
